Sweet and Saucy Carrots On The Startup Cook

Dinner can always be simplified. If you are fighting for time, consider making a single vegetable rather than several of them. Think about pairing flavours instead of increasing the number of dishes. Now this carrot dish makes a delicious accompaniment with some saucy chicken on a steaming bed of rice or noodles. 

It’s a very convenient make. All you need are a few ingredients found easily in your pantry and of course a few carrots. An ideal dish for a week day lunch or a week night, if you are super exhausted. This dish can stand alone with a portion of rice and some chilli paste. 

If you like carrot, then you will certainly love this dish... 


Ingredients 

2- 3 carrots
1 onion (small)
1 tsp of ginger 
2 cloves of garlic
2tbs of flour
1 tbs of butter
1 tsp of brown sugar
1 ½ cup of water
Salt 
Pepper
Oil 

Directions 

Wash, peel and fine dice the onion and garlic. 

Wash, peel and slice the carrot in to circular shapes and set aside. 

Place a heavy base saucepan on a medium high flame and pour the oil in to the saucepan. 

Add the chopped onion, garlic, ginger, a teaspoon of sage, salt and pepper in to it, and sauté. 

Pour the water in to the saucepan, add the sugar in to it and stir. 

Then add the carrot to the sauce pan and let it cook for a few minutes. 

In a separate pan, add the butter and flour in to it, and heat it up until a thick roux forms. 

Then carefully transfer the carrot dish in to it. 

Stir the carrots until the water starts to thicken in to a sauce. 

Once all the ingredients have combined well and the sauce has formed, take it off the heat. 


Disasters, Warnings and Tips 

If you like carrots, you will definitely love this simple dish. 

When I first attempted this dish, instead of making a roux, I just added the flour in to the water. DISASTER. 

You could try different vegetables with this recipe. 

Recently I did a wardrobe purge - I got rid of at least 10,000 worth of unworn clothes. 

I had this with noodles and some saucy chicken. YUM! 

Use spices according to personal taste, but do not add any chilli powder or paprika to this.
