Ingredients for sponge cake
- 225g self-raising flour
- 225g butter, at room temperature
- 225g sugar
- 4 eggs
- 1 teaspoon baking powder
Ingredients for fruit topping
- 1 packet strawberries
- 2 dragon fruits
- 2 passion fruits
- Half a lime
- Sugar to taste
How to make fruit topping
- Slice the strawberries thinly and cut the dragon fruit into small squares.
- Put them in a dish and add the passion fruit.
- Squeeze the lime into the fruit mixture.
- Add sugar to taste and mix the fruits together until it has become slightly syrupy.
Method
- Preheat the oven to 180 degrees C.
- Measure all the ingredients into a large bowl.
- Mix all of the ingredients using a electric whisk.
- Pour the mixture into 2 non-stick 7 inch (18cm) tins.
- Place them in the oven until golden brown 15-25 minutes.
- Cool on a wire rack before serving.
- Cut a slice and pour some topping on top.
