The Startup Cook – Savoury Muffins 

Muffins have a solid reputation of being a moderately sweet treat. The popular ones are of course blueberry, banana, vanilla, and chocolate chip. Personally, I love a good vanilla muffin. However I have been indulging in deserts much too often and have exceeded my permitted quota of sugar for the month. 

Therefore for the sake of my office pants that have become alarmingly snug on me, I have forfeited sugar based foods. This obviously gave rise to this wonderful muffin recipe, as I couldn’t deprive myself of food in general. Perfect as a tea time snack or even as breakfast, these savoury muffins will certainly not disappoint – it is absolutely delicious. 

All you need is dash of tomato sauce…YUM! 


Ingredients 

¾ cup of (all purpose) flour
½ cup of milk
¼ cup of cheese (grated)
3 tbs of butter
1 tsp of baking powder
1 egg
3 spring onions
1 (small) onion
2 cloves of garlic
Salt 
Pepper
Chilli powder
Oregano 

Directions 

Preheat the oven to 180 Celsius. Prepare a muffin tray and set it aside. 

Wash, clean and fine dice the spring onions, onion and garlic, and set it aside. 

Place the butter in a large mixing bowl, add the egg in to it and whisk for a few seconds. 

Then add the diced onions and garlic to the egg mixture and stir. 

In a separate dish include both the flour and the baking powder. 

Then add ½ teaspoon of pepper, 1 teaspoon of chilli powder, oregano and a dash of salt to the mixture to it and stir until the ingredients have combined. 

Fold in the flour mixture with the egg mixture. 

Pour the milk in to the, flour mixture and whisk until a batter has formed. 

Dump the cheese in and mix it in with the batter. 

 

Pour two tablespoons of batter in to each muffin case. 

Then bake it for 30 – 40 minutes. (Rotating once in between) 


Disasters, Warnings and Tips 

The cheese melts and tends to stick on to the muffin casing. 

Spray some baking spray in to the muffin cases or line them with some butter to avoid a sticky situation. 

I love these savoury muffins. #nomnomnom 

You can get about 6 – 7 muffins with this recipe. 

The muffins were attacked by the Hamids before I could take a complete picture. 

Just to get some meat in to it, you can also throw in some chopped chicken ham. 

I used cheddar for this recipe. 

Careful about the use of salt here, don’t add too much because cheddar generally tastes a little salty anyway. 

Good grief! The price of cheese? You think it’s made out of gold! Bullocks I tell you. 

Stick a toothpick in to the middle of the muffin, if it comes out with batter sticking on it, then it needs more baking.
