Who doesn’t love chocolate cake? And getting my kids to eat anything with chocolate on it is a piece of cake, excuse the pun. But sometimes variety is a good thing and since I love my food I like my children to explore their culinary horizons and try different flavors.
These easy to make little lemon cakes are a refreshing delight to eat for afternoon tea and if there are any left over you can add a bit of sweetness to your child’s lunch box for school the next day.
Ingredients
175g butter, softened
140g caster sugar (if you can get some, otherwise normal sugar will have to do)
140g all purpose flour
50g ground almonds
½ tsp baking powder
2 large eggs
1tsp vanilla extract
Juice of 3 lemons, zest of 2
200g granulated sugar
Method
Heat oven to 180c.

Line a square baking tin with baking parchment.
In a bowl beat together butter, caster sugar, flour, almonds, baking powder, eggs, vanilla, lemon zest and juice from ½ a lemon until smooth.
Pour batter into the cake tine and bake for 25-30 minutes until when you insert a skewer into the cake it comes out clean.
Place on a wire rack to cool and then cut into squares.
In two bowls add sugar in one and add squeezed lemon in the other. Very quickly dip all sides of the cake square on the lemon juice and then roll in the sugar.
Set aside to harden and enjoy immediately.
