
A cooling desert on these hot summer days is always a welcome indulgence. Pies are normally hot gooey masses of culinary delight consumed on a cold day, but this is a different sort of pie.
It has all the elements of a pie, crust, filling etc but leaves you cool and refreshed, and of course wanting bucket loads more! It’s also such an easy dessert to make with just a few ingredients that one normally has rattling around in the fridge.
So ‘wow’ the family or the unexpected guest with this delectable surprise and let your title of culinary goddess reign supreme, a bit of chocolate goes a long way!
Ingredients
For the crust
2-3 cups of gingerbread cookies crumbed
3 tablespoons of crumbed sugar
¼ cup of melted butter
For the filling
About two cups of vanilla ice-cream
½ slab of dark cooking chocolate melted
1 packet of whipping cream
1 teaspoon of vanilla essence
Method
Combine crust ingredients; press into pie plate and chill for 15 to 20 minutes, while making filling.
To make the filling first melt the cooking chocolate over a hot stove. Once completely melted, leave aside to cool for a few minutes.
In the meantime whip the whipping cream until it starts to get fluffy, slowly add in the melted chocolate continuously whipping, then add the teaspoon of vanilla essence and whip the mixture until fluffy.
Take your vanilla ice-cream and allow it to melt so that it is easy to handle, but not too much so it runs.
You will have to be quick in this step. Fill the pie dish with the vanilla ice-cream, top with a layer of the melted chocolate. Once the pie has been assembled it has to be frozen again, before consumption.
For an added touch you could top with some chopped nuts or some decadent chocolate. To be enjoyed by one and all!
