I love jam! Well who doesn't? And my all-time favourite flavour is strawberry. I eat it with everything from biscuits, bread, roti and I even mix it in with my plain yoghurt or use it as an ice cream topping! But I always struggled with the level of sweetness found in our locally produced jams and more importantly how artificial the texture is. Imagine my joy the day I found out that jam is one of the easiest things to make!

Here is my 3 ingredient recipe for strawberry jam.
All you need is:
250g of strawberries
100g of icing sugar
2 tablespoons of lemon juice
Method
Chop the strawberries into small pieces.
Use a nonstick pan and once it's heated, add in the strawberries together with the icing sugar and give it a good mix.
Depending on the sourness of the strawberries, you can add in more icing sugar if necessary. I like my jams to be a little sour.
Finally, add the lemon juice and boil it till it thickens. Stir occasionally. Refrigerate thereafter and it will thicken up a little bit more.
You can use any fruit you prefer, just control the sugar levels and less fibrous the fruit, the better!
